Bikini

Serves 10 guests

For the Clementine Syrup (produces 750ml)

300ml recently pressed clementine juice
200ml newly squeezed lemon juice
500g fine sugar

For the Premix (makes 850ml, serving 10)

400ml good quality vodka
100ml dry gin
150ml peach schnapps
200ml clementine syrup (as made above)
Whole cranberries, as a garnish
Mandarin essential oil, as a final touch

Instructions

Making the Syrup: Place the listed items in a pan, bring to a simmer, mixing so the sugar melts. Next, remove from the burner allowing it to reach room temperature fully. Pour into a clean bottle, close it and store chilled, where it will keep for about a month.

To make Premix: Mix all the liquids into a big jug, let it rest for 60 minutes, then filter it best through cheesecloth, making it completely strained.

For serving: Add 85ml of the batch mix into a mixing glass filled with ice, and agitate carefully for one minute to cool it down. Pour into an frosted cocktail glass or a similar vessel, decorate with a few cranberries and complete it with a brief mist of the essential oil over the top.
